Hard-boiled eggs sound simple enough, but getting them right — no rubbery whites, no gray-green yolk ring, shells that actually peel — is trickier than it looks on the stovetop. The Instant Pot takes all the guesswork out of it by delivering consistent steam pressure every single time. A quick natural release followed by a cold ice bath locks in that perfectly set, bright yellow yolk that makes these eggs genuinely satisfying to eat. The trick of starting at the wider end when peeling is a small detail that makes a huge difference, and running water helps the shell slip away in just a few pieces rather than a dozen frustrating fragments. These are endlessly useful to have on hand — slice them over salads, mash them into egg salad, or just eat them with a little salt straight from the fridge. Once you see how reliably this method works, you'll never go back to babysitting a pot of boiling water again.

Pour 1 cup of water into the Instant Pot insert. Place the trivet or steamer basket inside. Arrange the eggs in a single layer on the trivet — they can touch but should not be stacked.
Lock the lid and set the pressure-release valve to Sealing. Cook on Manual (High Pressure) for 5 minutes. While the eggs cook, fill a large bowl with cold water and a generous amount of ice.
