Hard-boiled eggs seem simple enough, but getting them to peel cleanly without a rubbery yolk or a greenish ring around it is genuinely tricky on the stovetop. The Instant Pot takes all the guesswork out of it — a short high-pressure cook followed by a natural release and an ice bath produces eggs with tender whites and perfectly set, golden yolks every single time. The ice bath isn't just a nice touch; it stops the cooking immediately and is the real secret to those shells that practically fall off on their own. Starting the peel at the wider end, where the air pocket sits, makes the whole process even smoother under a thin stream of running water. These eggs are as clean and straightforward as a recipe gets — just eggs, water, and ice, with no additives or preservatives to think about. Batch a dozen at once and you've got a week's worth of snacks, salad toppers, or deviled egg filling ready to go.

Pour 1 cup of water into the Instant Pot insert. Place the trivet or steamer basket inside. Arrange the eggs in a single layer on the trivet — they can touch but should not be stacked.
Lock the lid and set the pressure-release valve to Sealing. Cook on Manual (High Pressure) for 5 minutes. While the eggs cook, fill a large bowl with cold water and a generous amount of ice.
