Eggs are one of the most celebrated proteins in Mediterranean-style eating, and the Instant Pot makes preparing a big batch almost effortless. The pressure-steam method produces whites that are tender rather than rubbery, with yolks that are fully set but still creamy and bright — exactly what you want for snacking, salads, or a quick protein boost throughout the week. The ice bath step is key here, stopping the cooking immediately and making the shells practically fall away on their own. With just eggs, water, and ice, there are no hidden additives or processed ingredients to worry about — just clean, whole food that fits naturally into a vegetable-forward, balanced way of eating. Keep a batch peeled and ready in the fridge and you'll always have something satisfying within arm's reach, whether you're building a grain bowl, topping a simple salad, or eating them straight with a pinch of flaky salt.

Pour 1 cup of water into the Instant Pot insert. Place the trivet or steamer basket inside. Arrange the eggs in a single layer on the trivet — they can touch but should not be stacked.
Lock the lid and set the pressure-release valve to Sealing. Cook on Manual (High Pressure) for 5 minutes. While the eggs cook, fill a large bowl with cold water and a generous amount of ice.
