Hard-boiled eggs are one of those kitchen staples that seem simple until you're dealing with rubbery whites, greenish yolks, or shells that tear the egg apart on the way off. The Instant Pot method solves all of that with a hands-off pressure cook followed by a natural release and a quick ice bath — the result is consistently tender whites and perfectly set, bright yolks every single time. When you're avoiding high fructose corn syrup, eggs are one of the cleanest whole foods you can reach for, with zero ingredient labels to scrutinize and no sneaky sweeteners hiding anywhere. The ice bath isn't just a cooling step — it's what makes those shells practically fall away on their own, especially when you start peeling from the wider end where the air pocket gives you a natural entry point. These are endlessly versatile: slice them over salads, pack them for a protein-rich snack, or mash them into egg salad using condiments you've already vetted. Simple, reliable, and completely free of anything you didn't put in the pot yourself.

Pour 1 cup of water into the Instant Pot insert. Place the trivet or steamer basket inside. Arrange the eggs in a single layer on the trivet — they can touch but should not be stacked.
Lock the lid and set the pressure-release valve to Sealing. Cook on Manual (High Pressure) for 5 minutes. While the eggs cook, fill a large bowl with cold water and a generous amount of ice.
