Hard-boiled eggs are one of those deceptively simple foods that can still go sideways — rubbery whites, greenish yolks, shells that cling like they're holding a grudge. The Instant Pot takes all of that guesswork off the table, delivering consistently perfect results every single time. With nothing but eggs, water, and ice, this recipe is about as clean as cooking gets — no additives, no emulsifiers, no ingredient labels to scrutinize. That matters more than people realize, since many pre-packaged or restaurant-prepared egg products can sneak in stabilizers or coating agents you'd never expect. The natural pressure-and-steam method here lets the eggs do exactly what eggs are supposed to do, with zero interference. The ice bath locks in that bright, tender yolk and makes peeling genuinely satisfying — the shells practically slide off on their own. Whether you're meal-prepping for the week or just need a reliable high-protein snack, this method is hard to beat.

Pour 1 cup of water into the Instant Pot insert. Place the trivet or steamer basket inside. Arrange the eggs in a single layer on the trivet — they can touch but should not be stacked.
Lock the lid and set the pressure-release valve to Sealing. Cook on Manual (High Pressure) for 5 minutes. While the eggs cook, fill a large bowl with cold water and a generous amount of ice.
