Hard-boiled eggs sound simple enough, but getting them right — no green ring around the yolk, no rubbery whites, shells that actually peel — is trickier than most people expect. The Instant Pot takes all the guesswork out of it, delivering consistently perfect results every single time. Just water, eggs, and an ice bath are all you need, which means this recipe is naturally free of dairy and any other common allergens without any substitutions required. The five-minute pressure cook followed by a controlled natural release is the real secret here, giving the yolk that creamy, fully-set texture without overcooking. Transferring the eggs straight into an ice bath stops the cooking immediately and is what makes those shells slide off so satisfyingly under running water. Batch a dozen at once and you've got a week's worth of high-protein snacks, salad toppers, or meal-prep building blocks ready to go.

Pour 1 cup of water into the Instant Pot insert. Place the trivet or steamer basket inside. Arrange the eggs in a single layer on the trivet — they can touch but should not be stacked.
Lock the lid and set the pressure-release valve to Sealing. Cook on Manual (High Pressure) for 5 minutes. While the eggs cook, fill a large bowl with cold water and a generous amount of ice.
