Dried black beans simmer under pressure with sautéed onion, garlic, and a hit of jalapeño until they turn perfectly creamy with no chalky centers. Cumin, smoked paprika, and oregano build a deep, smoky flavor base, while a bright finish of fresh lime juice keeps everything tasting lively instead of heavy. The Instant Pot does the real work here, turning a pound of dried beans into a tender, richly seasoned pot in well under an hour of actual hands-on time. Serve them brothy as a saucy side or spoon them out drained and piled onto rice, into tacos, or alongside eggs — either way, the cilantro and lime wedges on top make every bowl feel finished. This one’s an easy, satisfying staple to keep in a vegetarian meal rotation, since it delivers big flavor and plenty of protein without any meat doing the heavy lifting. Make a big batch, because it reheats beautifully and only gets better as the flavors settle overnight.
