1 large yellow onion, finely diced
4 garlic cloves, minced
1 tbsp fresh ginger, peeled and finely grated
1 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
½ tsp garam masala
¼ tsp cayenne pepper
1 can (14 oz) diced tomatoes
2 cans (15 oz each) chickpeas, drained and rinsed
½ cup water
10 oz fresh baby spinach
½ tsp salt, plus more to taste
1 tbsp fresh lemon juice
¼ cup fresh cilantro, roughly chopped (optional)

Instructions

1
Heat the olive oil in a large deep skillet or Dutch oven over medium heat until shimmering. Add the onion and cook, stirring occasionally, until softened and translucent, about 7–8 minutes.
