Combine the water, sliced ginger, ground turmeric, ground cinnamon, black pepper, and cardamom (if using) in a small saucepan. Bring to a gentle simmer over medium heat, then reduce to low and cook for 3 minutes, until the liquid is deep golden and fragrant.
Remove from the heat and stir in the maple syrup until fully dissolved. Pour the concentrate through a fine-mesh strainer into a heatproof measuring cup or bowl, pressing on the ginger slices to extract all the liquid; discard the solids.
