That deep ruby concentrate is the star here — dried hibiscus flowers and fresh strawberries simmer together until the liquid turns jewel-bright and intensely fruity, then maple syrup and a squeeze of lemon round everything out beautifully. Frothed oat milk floats over the top in a gorgeous layered pour that looks like something you'd pay too much for at a café. The whole thing is built from straightforward pantry and produce staples, so there's no need to scan labels for hidden nut-based ingredients or worry about cross-contact from flavored syrups and specialty milks that sometimes sneak in unexpected additions. Oat milk does a surprisingly great job here — shake it in a jar or hit it with a frother and it gets genuinely foamy, holding that dreamy float effect as it slowly swirls into the hibiscus below. It's tart, floral, lightly sweet, and refreshing in a way that feels far more special than the effort involved. Make the concentrate ahead and keep it chilled, then assemble glasses whenever the craving hits.

Combine the water, dried hibiscus flowers, and strawberries in a small saucepan over medium heat. Bring to a gentle simmer, then reduce the heat to low and cook for 8 minutes, until the liquid is deep ruby-red and the strawberries are completely soft.
Remove from the heat and stir in the maple syrup and lemon juice until the syrup dissolves. Pour the mixture through a fine-mesh strainer into a heatproof bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract all the liquid. Discard the solids.
