Crisp, cooling, and layered with bright flavor, this iced green tea is the kind of drink that makes you wonder why you ever bought the bottled stuff. Fresh ginger adds a gentle warmth that plays beautifully against the clean, grassy notes of the tea, while mint leaves bring an herbal lift that lingers in every sip. Honey steps in as the only sweetener, dissolving cleanly into the brew without any of the additives or stabilizers that sneak into commercial ready-to-drink teas and flavored syrups. Every ingredient here is exactly what it says it is — no emulsifiers, no lecithins, no mystery additives on the label. The technique matters too: steeping the tea at just below a simmer keeps the flavor smooth and mellow rather than astringent, and straining everything out gives you a beautifully clear, clean liquid. A squeeze of lemon at the end is optional but genuinely lovely, brightening the whole glass. It's refreshing, fuss-free, and completely made from scratch — which is exactly the point.

Bring 4 cups of water to 175°F (80°C) in a medium saucepan — just below a simmer, with small bubbles beginning to form at the bottom of the pan. Remove from heat.
Add the tea bags and sliced ginger to the hot water. Steep for 3 minutes, then remove and discard the tea bags. Do not steep longer, as the tea will turn bitter.
