4 garlic cloves, minced
1 tbsp tomato paste
3 tbsp sweet hungarian paprika
1 tsp caraway seeds
1 tsp dried marjoram
1 can (14 oz) diced tomatoes, with juices

¼ cup sour cream, for serving (optional)
2 tbsp fresh flat-leaf parsley, chopped, for serving (optional)

Pat the beef cubes dry with paper towels and season all over with 1 1/2 tsp kosher salt and 1/2 tsp black pepper. Heat 2 tbsp of the oil in a Dutch oven over medium-high heat until shimmering.
2
Working in two or three batches to avoid crowding, add the beef in a single layer and sear undisturbed for 3–4 minutes per side until deeply browned on at least two sides. Transfer the browned beef to a plate and set aside. Reduce the heat to medium.
