This classic Cantonese-style steamed fish is clean, fragrant, and deeply satisfying — the kind of dish that looks impressive on the table but comes together with surprisingly little effort. A whole white fish like sea bass or snapper is seasoned simply with sea salt, then layered over fresh ginger and scallion before being steamed until the flesh is silky and just flaking at the bone. The real magic happens at the end, when a warm mixture of coconut aminos and ginger hits the fish followed by a pour of shimmering hot coconut oil that sizzles on contact and perfumes the whole dish. Because the sauce relies on coconut aminos rather than conventional soy sauce, it stays completely free of the additives and colorings that can sneak into store-bought condiments. Every ingredient here is straightforward and naturally vibrant, so there's no need to audit labels for hidden spice blends or seasoning mixes that might contain unwanted additions. A scatter of fine julienned scallion and fresh cilantro finishes things off with brightness and color. This is weeknight cooking at its most elegant — minimal fuss, maximum flavor.

Fill a large wok or wide pot with 2 inches of water and set a steaming rack or heatproof plate stand inside. Bring the water to a rolling boil over high heat.
Pat the fish dry with paper towels and rub both sides and the cavity with the fine sea salt. Lay half the ginger matchsticks and half the scallion lengths inside the cavity and scatter the remaining ginger matchsticks and scallion lengths on a heatproof serving plate. Set the fish on top of the aromatics on the plate.
