This classic Cantonese preparation is one of the most elegant ways to cook a whole fish — the steaming method keeps the flesh impossibly tender and moist, while layers of fresh ginger and scallion perfume every bite from the inside out. The real magic happens at the end, when a drizzle of shimmering hot coconut oil and warm coconut aminos hits the fish and sizzles dramatically on contact, blooming all those aromatics into something truly restaurant-worthy. Because the sauce leans on coconut aminos instead of traditional soy, the whole dish stays naturally free of any pork-derived additives or fermented byproducts that can sneak into bottled condiments. Every ingredient here is straightforward and clean, so you know exactly what's going into the dish — no label-reading anxiety required. Sea bass, snapper, or tilapia all work beautifully, giving you flexibility depending on what looks freshest at the market. A scatter of cilantro and fine julienned scallion on top adds a pop of color and brightness that makes this feel like a special occasion meal, even on a weeknight. Serve it the moment it comes off the heat and let that sizzle do the talking.

Fill a large wok or wide pot with 2 inches of water and set a steaming rack or heatproof plate stand inside. Bring the water to a rolling boil over high heat.
Pat the fish dry with paper towels and rub both sides and the cavity with the fine sea salt. Lay half the ginger matchsticks and half the scallion lengths inside the cavity and scatter the remaining ginger matchsticks and scallion lengths on a heatproof serving plate. Set the fish on top of the aromatics on the plate.
