Steamed whole fish is one of those dishes that looks impossibly elegant on the table but comes together with very little fuss in the kitchen. A whole white fish — sea bass, snapper, or tilapia all work beautifully — is seasoned simply with sea salt and layered with fresh ginger and scallion before going into the wok, letting the aromatics perfume the flesh from the inside out. The steaming method keeps every bite incredibly moist and delicate, which is exactly what a good piece of fish deserves. A warm sauce of coconut aminos and julienned ginger gets finished with a pour of shimmering hot coconut oil that sizzles dramatically the moment it hits the plate — it's one of those small kitchen moments that never gets old. Because every ingredient here is straightforward and plant- or seafood-based, there's no need to scan labels for hidden meat-based additives or broths. Fresh cilantro scattered over the top adds a bright, herby finish that ties everything together. This is the kind of weeknight centerpiece that feels like a restaurant meal without any of the effort.

Fill a large wok or wide pot with 2 inches of water and set a steaming rack or heatproof plate stand inside. Bring the water to a rolling boil over high heat.
Pat the fish dry with paper towels and rub both sides and the cavity with the fine sea salt. Lay half the ginger matchsticks and half the scallion lengths inside the cavity and scatter the remaining ginger matchsticks and scallion lengths on a heatproof serving plate. Set the fish on top of the aromatics on the plate.
