Steamed whole fish is one of those dishes that looks stunning on the table but comes together with surprisingly little effort — just fresh aromatics, a clean technique, and a sizzling sauce poured tableside. The fish is seasoned simply with sea salt, then layered over ginger matchsticks and scallion lengths that perfume the flesh from below as it steams. Cooking it over a rolling boil locks in moisture, so the result is silky, tender, and flakes apart at the lightest touch. The sauce — coconut aminos warmed with julienned ginger, then finished with a hit of shimmering hot coconut oil — hits the fish with a dramatic sizzle that's as satisfying to hear as it is to eat. Because every component here is a whole, recognizable ingredient, there's no need to scan labels or second-guess spice blends for hidden additives. Fresh cilantro and fine scallion strips scattered on top add brightness and a little color that makes the whole plate feel restaurant-worthy. It's the kind of weeknight dinner that tastes like you put in far more time than you actually did.

Fill a large wok or wide pot with 2 inches of water and set a steaming rack or heatproof plate stand inside. Bring the water to a rolling boil over high heat.
Pat the fish dry with paper towels and rub both sides and the cavity with the fine sea salt. Lay half the ginger matchsticks and half the scallion lengths inside the cavity and scatter the remaining ginger matchsticks and scallion lengths on a heatproof serving plate. Set the fish on top of the aromatics on the plate.
