Steamed whole fish is one of those dishes that looks impossibly elegant but comes together with very little fuss, and this version delivers every bit of that bright, aromatic payoff. The combination of fresh ginger, scallions, and a finishing pour of hot coconut oil creates that signature sizzle-and-steam moment that makes the dish so satisfying to bring to the table. Because the sauce is built entirely from coconut aminos instead of conventional soy sauce or other condiments, there are no hidden preservatives to worry about — coconut aminos are naturally free of the additives that sneak into so many bottled sauces. The fish itself is simply seasoned with sea salt and aromatics, so every element on the ingredient list is clean and straightforward. Steaming keeps the flesh incredibly moist and tender, and the hot oil poured over the julienned scallions and cilantro at the very end blooms all those fresh flavors in seconds. It's the kind of weeknight centerpiece that feels like a restaurant-quality meal without requiring any specialty equipment beyond a wok and a steaming rack.

Fill a large wok or wide pot with 2 inches of water and set a steaming rack or heatproof plate stand inside. Bring the water to a rolling boil over high heat.
Pat the fish dry with paper towels and rub both sides and the cavity with the fine sea salt. Lay half the ginger matchsticks and half the scallion lengths inside the cavity and scatter the remaining ginger matchsticks and scallion lengths on a heatproof serving plate. Set the fish on top of the aromatics on the plate.
