Steamed whole fish is one of those dishes that looks impossibly elegant but comes together with very little fuss, and this version delivers every bit of that classic Cantonese magic. The fish steams over aromatics β ginger tucked right into the cavity and scattered beneath β so the flesh absorbs that clean, fragrant heat from the inside out. Because the sauce is built from coconut aminos and coconut oil instead of soy sauce and the usual drizzle of neutral oil, there's no dairy anywhere in the picture, making it a genuinely worry-free choice without any substitutions that feel like a compromise. The real showstopper moment is pouring the shimmering hot oil-and-aminos mixture over the finished fish β it sizzles dramatically on contact with the fresh scallions and locks in an incredible savory aroma. Coconut aminos bring a slightly sweeter, rounder depth than traditional soy, which plays beautifully against the brightness of the ginger and the freshness of the cilantro. The result is tender, flaky fish with a sauce that tastes like it took far more effort than it did. Serve it straight from the plate the moment it hits the table β this one doesn't wait.

Fill a large wok or wide pot with 2 inches of water and set a steaming rack or heatproof plate stand inside. Bring the water to a rolling boil over high heat.
Pat the fish dry with paper towels and rub both sides and the cavity with the fine sea salt. Lay half the ginger matchsticks and half the scallion lengths inside the cavity and scatter the remaining ginger matchsticks and scallion lengths on a heatproof serving plate. Set the fish on top of the aromatics on the plate.
