Steamed whole fish is one of those dishes that looks impressive on the table but comes together with surprisingly little effort — and this version delivers serious flavor through nothing but heat, aromatics, and a sizzling finish. Fresh ginger and scallions are layered both inside the cavity and beneath the fish as it steams, perfuming every bite from the inside out. The sauce is built from coconut aminos and more ginger, warmed gently before coconut oil is heated until shimmering and poured over the finished fish in a dramatic, crackling rush. That final sizzle is what makes this dish — it blooms the aromatics instantly and gives the whole plate a glossy, restaurant-worthy finish. Because the recipe relies entirely on whole, unprocessed ingredients, there's no need to scan labels for hidden citrus additives, citric acid, or fruit-derived flavor enhancers that sneak into so many bottled sauces. Sea bass, snapper, or tilapia all work beautifully here, so you can use whatever looks freshest at the market. Serve it the moment it hits the table and let the steam and scent do the talking.

Fill a large wok or wide pot with 2 inches of water and set a steaming rack or heatproof plate stand inside. Bring the water to a rolling boil over high heat.
Pat the fish dry with paper towels and rub both sides and the cavity with the fine sea salt. Lay half the ginger matchsticks and half the scallion lengths inside the cavity and scatter the remaining ginger matchsticks and scallion lengths on a heatproof serving plate. Set the fish on top of the aromatics on the plate.
