Steamed whole fish is one of those dishes that looks impossibly elegant but comes together with very little fuss, and this Cantonese-inspired preparation is a perfect example. Fresh ginger and scallions perfume the fish from the inside out as it steams, while a finishing pour of shimmering hot coconut oil and coconut aminos creates that signature sizzle and glossy, savory sauce right at the table. Because the entire recipe leans on whole, unprocessed ingredients — fresh fish, aromatics, coconut aminos, and coconut oil — there's no need to scrutinize labels for hidden additives or thickeners that can sneak into bottled sauces and condiments. Coconut aminos steps in beautifully as the soy sauce alternative here, bringing a slightly sweet, umami-rich depth without any of the processed stabilizers found in many conventional condiments. The steaming method itself keeps the fish incredibly moist and delicate, so the flesh flakes at the gentlest nudge and practically melts on the tongue. A scatter of fresh cilantro and fine julienned scallions on top adds brightness and a little crunch that rounds everything out. This is the kind of clean, vibrant cooking that feels like a restaurant-quality meal without a single ingredient you'd need to second-guess.

Fill a large wok or wide pot with 2 inches of water and set a steaming rack or heatproof plate stand inside. Bring the water to a rolling boil over high heat.
Pat the fish dry with paper towels and rub both sides and the cavity with the fine sea salt. Lay half the ginger matchsticks and half the scallion lengths inside the cavity and scatter the remaining ginger matchsticks and scallion lengths on a heatproof serving plate. Set the fish on top of the aromatics on the plate.
