There is something deeply satisfying about a jar of homemade peach preserves sitting on your counter, and this version is as wholesome as it gets. Fresh peaches are sweetened with honey instead of refined sugar, then brightened with lemon juice and warmed with Ceylon cinnamon and ginger for a spread that tastes like the best part of summer. Because the whole recipe relies on fruit, honey, and spices, there is nothing here to trigger yeast-related concerns โ no added sugars that feed yeast overgrowth, no hidden fermented ingredients, just clean and simple whole-food components. The blanch-and-peel technique makes prep surprisingly quick, and you can mash the fruit to whatever texture you like, from chunky and rustic to silky smooth. Watching the mixture slowly thicken and deepen in color on the stove is genuinely one of the more rewarding things you can do in a kitchen. Spread it on a yeast-free cracker, swirl it into yogurt, or spoon it over oatmeal โ this preserve earns its place in the fridge fast.

To peel the peaches, score a shallow X on the bottom of each one, lower them into boiling water for 30โ45 seconds, then transfer immediately to a bowl of ice water. The skins will slip off easily. Pit and roughly chop the peeled peaches into 1-inch pieces.
Combine the chopped peaches, honey, lemon juice, ground Ceylon cinnamon, and ground ginger in a large heavy-bottomed saucepan. Stir to coat the fruit evenly.
