There is something deeply satisfying about a jar of homemade peach preserves sitting on your counter, golden and fragrant, made entirely from ingredients you chose yourself. Fresh summer peaches are the star here, sweetened with honey instead of refined sugar and warmed with Ceylon cinnamon and ginger for a spread that tastes like a little more effort than it actually takes. The blanch-and-peel method makes prep surprisingly quick, and the long, slow simmer on medium-low is what coaxes the fruit into that thick, jammy consistency that holds its shape on a cold plate. You control the texture โ leave it chunky and rustic or mash it smooth, depending on what you're spreading it on. Store-bought fruit preserves can be a minefield of unexpected add-ins, but this one is straightforward: peaches, honey, lemon, and spice, nothing more. It's wonderful on toast, stirred into yogurt, or spooned over biscuits, and the fact that it comes together in a single heavy-bottomed saucepan makes cleanup almost as easy as eating it.

To peel the peaches, score a shallow X on the bottom of each one, lower them into boiling water for 30โ45 seconds, then transfer immediately to a bowl of ice water. The skins will slip off easily. Pit and roughly chop the peeled peaches into 1-inch pieces.
Combine the chopped peaches, honey, lemon juice, ground Ceylon cinnamon, and ground ginger in a large heavy-bottomed saucepan. Stir to coat the fruit evenly.
