Summer peaches at their peak deserve better than a jar full of additives and mystery spices โ and this honey-sweetened preserve delivers exactly that. Fresh lemon juice brightens the fruit while a touch of Ceylon cinnamon and ground ginger add warmth without overwhelming the natural sweetness of the peaches. Many store-bought preserves and spice blends sneak in nutmeg as a background note, so making your own from scratch is the surest way to keep it out of the jar entirely. The honey does double duty here, sweetening the fruit and helping the preserves develop a gorgeous, glossy consistency as they cook down low and slow. A simple plate-chill test tells you when the texture is just right โ thick, jammy, and ready to hold its shape on a warm biscuit or a slice of toast. Ladled into sterilized jars and cooled on the counter, this is the kind of small-batch preserve that makes the whole kitchen smell like the best version of August.

To peel the peaches, score a shallow X on the bottom of each one, lower them into boiling water for 30โ45 seconds, then transfer immediately to a bowl of ice water. The skins will slip off easily. Pit and roughly chop the peeled peaches into 1-inch pieces.
Combine the chopped peaches, honey, lemon juice, ground Ceylon cinnamon, and ground ginger in a large heavy-bottomed saucepan. Stir to coat the fruit evenly.
