Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that looks like it came from a fancy café but comes together in your own kitchen with just a handful of real ingredients. The honey-mint syrup is the secret weapon here — a quick simmer with fresh mint sprigs gives it a gentle herbal sweetness that pairs beautifully with the deep, jewel-toned pomegranate juice. Since fermentation is completely off the table with a yeast-free lifestyle, finding exciting beverages that still feel celebratory can be a real challenge, and this one absolutely delivers. Every component is naturally free of any fermented or yeast-derived ingredients, so you can sip without second-guessing the label on a single bottle. Pouring the sparkling water slowly down the side of the glass keeps those bubbles lively all the way to the last sip. A handful of pomegranate arils and a fresh mint sprig on top make it feel genuinely special, whether you're serving guests or just treating yourself on a weeknight.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
