Fresh pomegranate, honey, and mint come together in a sparkling drink that feels genuinely special without requiring anything fancy. The honey syrup is made by gently dissolving honey with water and steeping fresh mint sprigs, which gives the whole cooler a floral, subtly herbal backbone that store-bought mixers just can't replicate. Pressing your own pomegranate juice takes a few extra minutes but delivers a deep, jewel-toned color and a tart-sweet flavor that's miles ahead of bottled versions. Pouring the sparkling water slowly down the side of the glass keeps every sip effervescent and light, making this feel more like a craft mocktail than a simple homemade drink. Every ingredient here is naturally free of tree nuts, so there's no label-scanning or substitution stress — just clean, vibrant flavors from start to finish. Garnished with a sprig of mint and a handful of ruby arils, it's also genuinely beautiful to serve to guests.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
