Tart, floral, and fizzy all at once, this sparkling cooler is the kind of drink that looks like it came from a fancy brunch spot but comes together in your own kitchen with just a handful of real ingredients. The base is fresh pomegranate juice pressed right from the fruit, which gives it a deep ruby color and a bright, slightly tangy flavor that no bottled version can quite match. A quick honey-mint syrup — made by steeping fresh mint sprigs in warm honey and water — adds a gentle sweetness and an herby lift that ties everything together beautifully. Once the syrup cools, it's just a matter of layering everything over ice and topping with chilled sparkling water for that satisfying fizz. Pouring the sparkling water slowly down the side of the glass keeps the bubbles intact, so every sip stays lively from first to last. A few scattered pomegranate arils and a fresh mint sprig on top make it look genuinely stunning with almost zero extra effort. It's naturally plant-based with no animal-derived ingredients beyond the honey, making it an effortless fit for anyone eating meat-free without sacrificing a single drop of flavor.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
