Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any afternoon feel like a special occasion. It starts with a quick honey-mint syrup — just honey, water, and fresh mint steeped together — then gets layered over ice with freshly pressed pomegranate juice and chilled sparkling water. Every single ingredient here is exactly what it sounds like, which is the whole point. Bottled juices and flavored sodas often sneak in refined seed oils through added flavorings or emulsifiers, but when you press your own pomegranate and sweeten with pure honey, there's nothing to second-guess. The result is a jewel-toned, lightly sweet drink with a bright herbal finish that tastes far more impressive than the effort involved. Pouring the sparkling water slowly down the side of the glass keeps those bubbles alive all the way to the last sip, so the texture stays as satisfying as the flavor.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
