Tart, floral, and absolutely gorgeous in the glass, this sparkling cooler is the kind of drink that makes any occasion feel a little more special. Fresh pomegranate juice gives it a deep ruby color and a bold, jewel-like flavor that no bottled substitute can match. The honey-mint syrup is the secret weapon here — just a quick simmer with fresh mint sprigs coaxes out a fragrant sweetness that plays beautifully against the pomegranate's natural tartness. Every single ingredient in this drink is naturally free of grain-based concerns, so there's no label-scanning or second-guessing required. Sparkling water keeps things light and effervescent, making it a refreshing choice whether you're serving it at brunch, a dinner party, or just a quiet afternoon at home. Pour slowly down the side of the glass to keep those bubbles alive, and don't skip the pomegranate arils on top — they make it look like something straight off a restaurant menu.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
