Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that looks like it came from a fancy café but comes together in your own kitchen with just a handful of real ingredients. Fresh pomegranate juice gives it a deep ruby hue and a bright, slightly tangy flavor that pairs beautifully with the honey-mint syrup you make by simply steeping fresh mint in warm honey water. The whole thing is naturally free of any animal-derived concerns beyond honey, built entirely from fruit, water, and herbs — no hidden additives, no processed shortcuts, nothing to second-guess. Pouring the sparkling water slowly down the side of the glass keeps those bubbles alive, so every sip has that satisfying effervescence. Scatter a few pomegranate arils on top and tuck in a sprig of mint, and you have something genuinely beautiful on the table. It's equally at home at a weekend brunch, a holiday spread, or just a quiet afternoon when you want something a little more special than plain water.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
