Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any occasion feel a little more special. Fresh pomegranate juice brings a deep ruby hue and bold, jewel-like flavor that no bottled substitute can quite match. A quick honey-mint syrup — made by steeping fresh mint right in warm honey water — adds a gentle sweetness and herbal lift that ties everything together beautifully. The whole thing comes together in minutes: syrup, juice, ice, and a slow pour of chilled sparkling water to keep every last bubble intact. Garnished with a sprig of mint and a handful of glistening arils, it looks like something from a restaurant menu but requires almost no effort at all. Every ingredient here is naturally plant-based and seafood-free, so it fits effortlessly into a pescatarian lifestyle without any label-reading or substitutions required. Pour it at brunch, serve it at a dinner party, or just make it for yourself on a Tuesday — it's that good.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
