Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any ordinary afternoon feel like a celebration. Fresh pomegranate juice brings a deep ruby hue and bold, jewel-like flavor, while a quick honey-mint syrup adds just enough sweetness to round everything out beautifully. The syrup comes together in minutes on the stovetop — honey and water dissolve together, mint steeps in until fragrant, and then it's strained and cooled before it ever hits the glass. Pouring the sparkling water slowly down the side of the glass keeps those bubbles lively all the way to the last sip. Every single ingredient here is straightforward and plant-based, so there's absolutely nothing to second-guess when it comes to unwanted additions hiding in the mix. Scatter a few pomegranate arils on top and tuck in a sprig of fresh mint, and you've got something that looks genuinely stunning with almost zero effort.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
