This sparkling cooler is the kind of drink that looks like it came from a fancy café but comes together in your own kitchen with just a handful of wholesome ingredients. Fresh pomegranate juice brings a deep, jewel-toned color and a tart-sweet complexity that pairs beautifully with the floral honey-mint syrup you make in minutes on the stovetop. Pomegranates and raw honey are staples of the Mediterranean pantry, so this drink fits naturally into that way of eating without any awkward substitutions or compromises. The mint steeps right into the syrup, giving every sip a cool, herby lift that makes the whole glass feel refreshing and a little sophisticated. Pouring the sparkling water slowly down the side of the glass keeps those bubbles alive, so the texture stays lively all the way to the last sip. Scatter a few pomegranate arils on top and you've got something genuinely beautiful on the table with almost no effort at all.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
