Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any occasion feel a little more special. Fresh pomegranate juice is pressed right at home and sweetened with a honey-mint syrup that takes just minutes to pull together on the stovetop. The mint steeps gently into the warm honey and water, lending a cool, herbal note that plays beautifully against the pomegranate's deep, jewel-like tang. Every single ingredient here is naturally free of tree nuts, so there's no label-scanning or substitution stress — just clean, vibrant flavors from start to finish. Pouring the sparkling water slowly down the side of the glass keeps those bubbles alive, so your first sip is as lively as the last. Scatter a few pomegranate arils on top and you've got something that looks like it came from a fancy cocktail bar but came together entirely in your own kitchen.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
