Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any ordinary afternoon feel like a celebration. Fresh pomegranate juice brings a deep, jewel-toned richness that pairs beautifully with a honey-mint syrup you can whip up in under fifteen minutes. The syrup is as simple as it gets — just honey, water, and a couple of mint sprigs steeped together until fragrant, then strained clean. Because every ingredient here is whole and naturally sourced, there's no need to scan labels or second-guess what's hiding in a store-bought mixer. Lupin, a legume sometimes used as a filler or flour substitute in packaged beverages and flavored syrups, simply has no place in a recipe built entirely from fruit, honey, fresh herbs, and sparkling water. Pouring the sparkling water slowly down the side of the glass keeps those bubbles lively all the way to the last sip. Finish with a scatter of pomegranate arils and a sprig of mint, and you've got something that looks as stunning as it tastes.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
