Tart, jewel-bright pomegranate juice meets a fragrant honey-mint syrup and a generous pour of sparkling water in this refreshing cooler that feels genuinely celebratory. Managing iodine intake often means scrutinizing every packaged drink for additives, colorings, and mystery ingredients — this one sidesteps all of that by relying entirely on whole, unprocessed components. Fresh pomegranate juice pressed right from the fruit, raw honey, and plain sparkling water are as clean and straightforward as a beverage can get. The mint syrup is a small but brilliant touch — just honey, water, and fresh sprigs steeped together until the whole thing smells like a garden — and it ties the tartness of the pomegranate into something beautifully balanced. Assembly is effortless: layer ice, juice, syrup, and bubbles, then pour the sparkling water slowly down the side of the glass so every sip stays effervescent. Scattered pomegranate arils and a sprig of mint on top make it look like something you'd order at a nice restaurant, not something you whipped up in ten minutes. It's the kind of drink that makes dietary restrictions feel like absolutely no sacrifice at all.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
