Tart, floral, and beautifully fizzy, this sparkling cooler is the kind of drink that looks like it came from a fancy brunch menu but comes together with just a handful of real ingredients. Fresh pomegranate juice gives it a deep ruby color and a bright, slightly tangy flavor that pairs perfectly with the honey-mint syrup you make right on the stovetop. That syrup is the secret weapon here — steeping fresh mint in warm honey water for just ten minutes coaxes out an herbal sweetness that feels genuinely sophisticated. Drinks like this can sometimes sneak in unexpected additives or syrups when you grab them pre-made, but squeezing your own pomegranate and mixing everything from scratch means you know exactly what's in your glass. Pouring the sparkling water slowly down the side of the glass keeps those bubbles alive, so every sip has that satisfying effervescence. A few scattered pomegranate arils and a sprig of mint on top make it look stunning with almost zero extra effort. It's refreshing, naturally sweetened, and completely free of anything that doesn't belong.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
