Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that looks like it came from a fancy café but comes together in your own kitchen with just a handful of real ingredients. Fresh pomegranate juice brings a deep, jewel-toned richness that pairs beautifully with a honey-mint syrup you steep right on the stovetop — no artificial flavors, no mystery additives. Because every single component here is naturally free of dairy, there's nothing to swap or second-guess; it's just clean, vibrant refreshment from the first sip. The mint syrup is a small step that makes a big difference, infusing gentle herbal sweetness that keeps the drink from tipping too sugary. Pouring the sparkling water slowly down the side of the glass is the little trick that keeps every sip perfectly effervescent. Finish with a few pomegranate arils scattered on top and a fresh mint sprig, and you've got something that's genuinely stunning to serve at brunch, a dinner party, or honestly just a Tuesday afternoon.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
