Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any occasion feel a little more special. Fresh pomegranate juice is pressed right from the fruit and layered with a delicate honey-mint syrup, then lifted with chilled sparkling water for a finish that's bright and refreshing without being overly sweet. Every single ingredient here is naturally free from tree nuts of any kind, so you can sip without a second thought about what might be lurking in a flavored syrup or store-bought mixer. Making your own honey syrup takes just a few minutes on the stovetop, and steeping fresh mint into it adds a subtle herbal note that ties the whole drink together beautifully. Pouring the sparkling water slowly down the side of the glass is a small step that makes a real difference, keeping those bubbles lively all the way to the last sip. Garnished with a sprig of mint and a handful of jewel-like pomegranate arils, it looks stunning served in tall glasses for brunch, a celebration, or just a Tuesday afternoon that deserves something a little extra.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
