This sparkling cooler is the kind of drink that looks like it came from a fancy brunch menu but comes together with just a handful of real, wholesome ingredients. The deep ruby color of fresh pomegranate juice is stunning on its own, and when it meets a delicate honey-mint syrup and a rush of cold bubbles, the result is genuinely refreshing. Many store-bought sparkling drinks and flavored sodas sneak in ginger as a background note, so making your own is the cleanest way to enjoy a fizzy, fruit-forward beverage without second-guessing the label. Here, the sweetness comes entirely from honey simmered with fresh mint, which adds a subtle herbal lift without any heat or spice. Pressing your own pomegranate juice takes just a few extra minutes and makes the flavor noticeably brighter and more vibrant than anything from a bottle. A slow pour of sparkling water keeps every sip lively and effervescent right down to the last drop. Dress it up with a few pomegranate arils and a sprig of mint and it's instantly the most beautiful glass on the table.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
