Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that looks like it came from a fancy café but comes together with just a handful of real, whole ingredients. Every component here is exactly what it says it is — fresh pomegranate juice pressed right from the fruit, honey dissolved into a fragrant mint syrup, and plain sparkling water — so there's nothing hidden, no stabilizers, no additives, no emulsifiers of any kind. That matters more than people realize with store-bought drinks and flavored sodas, which routinely sneak in lecithins or other emulsifying agents to keep their formulas shelf-stable. Making your own honey syrup takes only a few minutes on the stove, and the mint steeping into the warm honey is genuinely one of the better kitchen smells you'll encounter. The deep ruby pomegranate juice swirling up through the bubbles makes this as beautiful to look at as it is to drink. Serve it over ice with a few scattered arils on top and it's instantly the most impressive glass on the table.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
