Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any afternoon feel like a special occasion. Fresh pomegranate juice brings a deep ruby hue and bold, jewel-like flavor, while a quick honey-mint syrup adds just enough sweetness and herbal lift to make it feel genuinely crafted. The syrup comes together in minutes on the stovetop — honey and water dissolve together, mint steeps until fragrant, and then it's strained and cooled before you build the drink. Because every ingredient here is naturally free of eggs, there's nothing to second-guess or swap out; it's simply a clean, vibrant recipe from start to finish. Pouring the sparkling water slowly down the side of the glass keeps those bubbles alive, so your first sip is as lively as it looks. A handful of pomegranate arils and a fresh mint sprig on top make it look like something from a restaurant menu, but you built it yourself in about fifteen minutes.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
