Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that looks like it came from a fancy café but comes together with just a handful of real ingredients. Fresh pomegranate juice brings a deep ruby hue and bold, slightly tangy flavor, while a quick honey-mint syrup adds just enough sweetness to balance everything out. The whole thing is naturally free of any tropical or tree-derived oils, so you can sip without scanning labels or second-guessing what's hiding in a store-bought mixer. Pressing your own pomegranate juice takes only a few minutes and makes a noticeable difference in freshness compared to bottled versions. Pouring the sparkling water slowly down the side of the glass keeps those bubbles alive all the way to the first sip. Topped with a sprig of mint and a handful of jewel-like arils, it's as beautiful to look at as it is to drink — perfect for entertaining or just treating yourself on a warm afternoon.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
