This sparkling cooler is the kind of drink that looks like it came from a fancy brunch spot but comes together with just a handful of real, whole ingredients. The deep ruby color of fresh pomegranate juice swirled with a delicate honey-mint syrup is genuinely stunning in a glass. Because every component here is made from scratch — honey, water, fresh mint, pomegranate, and sparkling water — there's no spice blend or flavored syrup hiding anything unexpected, making it a naturally safe and refreshing choice for anyone avoiding warm spices. The honey syrup is gently steeped with fresh mint rather than any dried spice, so you get a subtle herbal sweetness that lets the tart pomegranate shine. Pouring the sparkling water slowly down the side of the glass keeps those bubbles lively all the way to the last sip. Finish it with a few jewel-like pomegranate arils and a sprig of mint, and you've got something that feels celebratory without any fuss.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
