Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any occasion feel a little more special. Fresh pomegranate juice is pressed right at home, then layered with a fragrant honey-mint syrup and topped with chilled sparkling water for a beverage that's genuinely stunning in the glass. The mint steeps gently into the warm honey syrup, adding a subtle herbal note that keeps every sip interesting without overpowering the bright, jewel-toned pomegranate. Every single ingredient here is naturally free from tree nuts, so there's no label-scanning or cross-contamination stress — just clean, whole-food components you can feel good about. Pouring the sparkling water slowly down the side of the glass is a small but satisfying trick that keeps those bubbles alive all the way to the last sip. Scatter a few pomegranate arils on top and you've got something that looks like it came from a fancy cocktail bar, made entirely in your own kitchen.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
