Tart, floral, and fizzy, this sparkling cooler is the kind of drink that looks like it came from a fancy café but comes together in your own kitchen with just a handful of real ingredients. Many bottled juices and flavored sparkling drinks sneak in additives and thickeners that can be hard to spot on a label, so making your own from scratch is a genuinely smart move. Here, the pomegranate juice is pressed fresh from the fruit itself, and the sweetness comes from a simple honey syrup steeped with mint — nothing processed, nothing hidden. The mint syrup takes only minutes to make and adds a cool, herby depth that makes the whole drink feel elevated without any extra effort. Pouring the sparkling water slowly down the side of the glass keeps those bubbles lively all the way to the last sip. Finished with a few jewel-like pomegranate arils and a sprig of fresh mint, it's as beautiful to look at as it is refreshing to drink.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
