Tart, floral, and fizzing with color, this sparkling cooler is the kind of drink that makes any occasion feel a little more special. Fresh pomegranate juice brings a deep ruby hue and bold, jewel-like flavor that no bottled substitute can match. A quick honey-mint syrup — just honey, water, and a couple of fresh sprigs steeped off the heat — adds gentle sweetness and an herbal lift without overpowering the fruit. The whole thing comes together in minutes and is completely plant-based by nature, so there's nothing to swap or second-guess. Pouring the sparkling water slowly down the side of the glass keeps every sip beautifully effervescent right to the bottom. A handful of pomegranate arils and a fresh mint sprig on top turn it into something that looks almost too pretty to drink — almost.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
