This sparkling cooler is the kind of drink that looks like it came from a fancy café but comes together in your own kitchen with nothing but real, whole ingredients. Every drop of flavor here earns its place — fresh pomegranate juice pressed right from the fruit, honey dissolved into a fragrant mint syrup, and cold sparkling water to bring it all to life. There's no flavor packet, no bottled syrup with a suspiciously long ingredient list, and no artificial anything hiding in the mix. For anyone who scrutinizes labels at the grocery store, that peace of mind is genuinely refreshing — almost as refreshing as the drink itself. The honey-mint syrup takes just minutes to make and adds a floral sweetness that plays beautifully against the tart, jewel-bright pomegranate. Poured over ice and topped with bubbles, it's stunning enough to serve at a dinner party but easy enough to whip up on a Tuesday afternoon.

Combine the honey and water in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2 minutes. Add the 2 mint sprigs, remove from heat, and let steep for 10 minutes until fragrant. Strain through a fine-mesh strainer and discard the mint. Let the syrup cool to room temperature, about 5 minutes.
To juice the pomegranate, cut it in half and press each half firmly on a citrus juicer, or press the arils through a fine-mesh strainer with the back of a spoon, until you have 1 cup of juice. Discard the solids.
