Warm milk sounds simple, but the version you make at home hits completely differently from anything you'd find pre-made or packaged at the store. Many flavored milk drinks and creamers sneak in thickeners and stabilizers — including carrageenan — that you'd never expect to find in something so wholesome. This recipe keeps things beautifully clean: just whole milk, raw honey, pure maple syrup, and a whisper of cardamom warmed gently on the stove. The cardamom adds a faintly floral, spiced depth that makes the whole mug feel a little luxurious, and the optional vanilla bean takes it somewhere truly special. Whisking the honey and maple syrup in off the heat means their delicate flavors stay bright rather than cooking off. It comes together in minutes and is the kind of thing you'll want to make every evening when the temperature drops.

Pour the milk into a small saucepan. Add the cardamom and the vanilla bean pod and seeds, if using. Warm over medium-low heat, whisking occasionally, until the milk is steaming and small bubbles form around the edges — about 3 to 4 minutes. Do not let it boil.
Remove from the heat. Discard the vanilla bean pod, if used. Add the honey and maple syrup and whisk until fully dissolved.
