In a small bowl or jar, combine the lemon juice, honey, Dijon mustard, grated garlic, salt, and black pepper. Whisk together until the honey is fully dissolved and the mixture looks uniform.
Slowly drizzle in the olive oil while whisking constantly until the dressing is emulsified and slightly thickened — it should look cohesive rather than separated.
