Sticky, golden, and fragrant with garlic and warm spices, this roast pork loin is the kind of centerpiece that makes a weeknight feel like a special occasion. The glaze is built from raw honey, coconut aminos, fresh ginger, and apple cider vinegar — every single ingredient is naturally free of rye and rye derivatives, so there's no label-scanning required. Coconut aminos does a brilliant job standing in for soy sauce, delivering that deep, savory-sweet depth without any grain-based ingredients sneaking in. The pork gets a spiced rub of turmeric, ginger, and sea salt before a hard sear in coconut oil, which locks in the juices and builds a gorgeous crust before the oven even comes into play. Layering the glaze in two rounds during roasting means every slice is lacquered and caramelized all the way through. Resting the meat and finishing with that reserved drizzle of glaze is what takes it from good to genuinely impressive — don't skip that step. A scatter of fresh parsley at the end adds a little brightness that cuts right through the richness.

Remove the pork loin from the refrigerator 30 minutes before cooking. Preheat the oven to 400°F (205°C).
In a small saucepan over medium-low heat, combine the honey, coconut aminos, minced garlic, grated ginger, apple cider vinegar, and 1/4 tsp turmeric. Stir and cook for 3–4 minutes, until the garlic is fragrant and the glaze has thickened slightly and coats the back of a spoon. Remove from heat and set aside. Reserve 2 tablespoons of the glaze in a separate small bowl to use as a finishing sauce after the pork is cooked.
